Vegan Chickpea “Tuna” Salad on Whole Wheat Toast

One of the best things about going vegan has been discovering new favorite foods and recipes that I might otherwise have never tried. This is definitely one of those new favorites! This chickpea salad is very delicious.

Inspired by this recipe which I sought out after the amazing chickpea “tuna” melt I had at Terri last week.

Just combine all of it and mash. I used the chopper attachment on my hand blender. I have got to pick up some Daiya to make a tuna melt next time.

Quote from my boyfriend: “Why would you call it tuna? Tuna is disgusting. You should call it Fiesta Super Chickpea Explosion.” Hmm. He does have a point. (Sorry, tuna-lovers.) I mean, it’s not tuna, and I’m not trying to make a tuna substitute since I never liked tuna either. What do you think I should call it?
